Fragrance defines this wine, marked by an array of lifted violets, bramble, and redcurrant aromas. Its palate bursts with bright fruit flavors, encompassing cranberry, mulberries, and blueberries. A refreshing hint of nettle lends a leafy lift, while clove spices intertwine with vibrant acidity and the graceful momentum of the fruit. The Malbec component contributes energy and crunch, resulting in a wine of exceptional fruit purity.
Carefully hand-harvested, the Cabernet undergoes berry sorting, while the Malbec is sorted by bunch. After sorting, the Cabernet is destemmed, further berry sorted, and then gently crushed into the half-tonne open fermenters. A small portion of Cabernet (5%) undergoes whole bunch fermentation to elevate the wine's lift and aromatic qualities. The Malbec is destemmed into smaller fermenters and subjected to hand plunging twice daily. Maturation takes place in French Bordeaux-shaped barrels, with only 15% new oak utilized to accentuate the wine's juicy fruit profile and ensure immediate enjoyment. Blending occurs just before bottling, ensuring optimal flavor integration.
